Twice Baked Potatoes

Ingredients:
• 4 medium baking potatoes, unpeeled
• 1/3 cup (80mL) Molly McButter® Natural Butter Flavor sprinkles
• 1 tsp (5mL) garlic powder
• 1 tsp (5mL) dried parsley
• vegetable oil spray
• 1 large onion, minced
• 1/2 cup (125mL) sour cream
• 1/2 cup (125mL) cheddar cheese, low fat shredded
• fresh parsley minced, optional

Serves: 4
Prep Time: 10 min
Cook Time: 55 min to 1 hr
Instructions:
1. Preheat oven to 400°F (200°C).
2. Bake potatoes approximately 40 minutes or until tender.
3. When cooked, slice a 1/4 off the top of each potato.
4. Scoop out potato from shells using a melon baller (leave a thin layer of potato on skin) into a bowl.
5. Mash potatoes.
6. Add Molly McButter® sprinkles, garlic powder, dried parsley to mashed potatoes.
7. Lightly spray a non-stick skillet with vegetable oil spray, sauté onions until soft.
8. Add to potato mixture along with sour cream and cheddar cheese, mix well.
9. Spoon mixture into potato shells.
10. Bake 15-20 minutes or until potatoes are heated through and cheese is melted.
11. Sprinkle with fresh parsley if desired.
