Potatoes Delmonico

Ingredients:
• 1/2 cup (125mL) skim milk
• 1 cup (250mL) diced, unpeeled potatoes
• 1 1/2 tsp (7mL) Molly McButter® Natural Butter Flavor Sprinkles
• 1/2 oz. (15g) feta cheese, crumbled
• 1 1/2 tsp (7mL) dry breadcrumbs
• 1/2 tsp (2mL) dried parsley flakes

Serves: 2
Prep Time: 15 min
Cook Time: 20 min
Instructions:
1. Preheat oven to 350°F (175°C).
2. Combine milk and potatoes in a saucepan. Bring to a simmer over medium heat and cook until tender, about 10 minutes.
3. Transfer potatoes to small casserole sprayed with cooking spray, using a slotted spoon. Reserve cooking milk.
4. Whisk Molly McButter® into milk, pour over potatoes.
5. Sprinkle potatoes with cheese, breadcrumbs and dried parsley.
6. Bake for 20 minutes. Serve hot.
7. (Recipe may be doubled to serve 4).
