Lean & Cheesy Brunch Potatoes

Ingredients:
• 1 lb. (454g) potatoes
• 1/3 cup (80mL) chopped onions
• 1/2 cup (125mL) water
• 1/4 cup (60mL) each chopped green and red pepper
• 3 Tbsp. (45mL) Molly McButter® Cheese Flavor Sprinkles
• 1 tsp (5mL) dried parsley flakes
• vegetable oil cooking spray

Prep Time: 15 min
Cook Time: 18 min to 20 min
Instructions:
1. Peel potatoes and cut into 1/2" (1.25cm) cubes.
2. Spray a medium skillet with oil spray, sauté potatoes and onions until lightly browned, about 10 minutes.
3. Add water, cover and cook for 5 minutes or until potatoes are tender.
4. Stir in peppers and continue cooking for a few minutes.
5. Stir in Molly McButter® and parsley. Toss well, serve hot.
