Mediterranean Chicken & Rice Salad

Ingredients:
• 1 1/2 cups (375mL) long grain rice
• 1 cup (250mL) sliced black olives
• 1/2 cup (125mL) feta cheese, crumbled
• 1 Tbsp. (15mL) Molly McButter® Natural Butter Flavor Sprinkles, diluted in about 1/2 teaspoon (2mL) water
• 1 tsp (5mL) Mrs. Dash® Tomato Basil Garlic Seasoning Blend
• 1 lb. (500g) chicken tenders
• 3 Tbsp. (45mL) Molly McButter® Natural Flavor Butter Sprinkles
• 1/2 cup (125mL) hot water
• 1/2 cup (125mL) minced onions
• 1/4 cup (60mL) chopped roasted red peppers
• 1 medium green pepper

Instructions:
1. Prepare rice according to package directions.
2. Mix together olives, feta cheese, Mrs. Dash® Tomato Basil Garlic, and the diluted Molly McButter®. Set aside.
3. Spray non-stick skillet with vegetable spray. Sauté chicken tenders 2 minutes per side.
4. Dissolve remaining Molly McButter® in water and add to pan with onions, roasted red pepper. Cover and continue cooking 2 more minutes.
5. Remove from heat and cut chicken into bite-sized pieces.
6. Dice the green pepper.
7. Toss rice with chicken, sauce, black olives, feta cheese mixture, and green pepper.
8. Cool to room temperature or chill.
