Easy Lemon Mushroom Risotto

Ingredients:
• 1 cup (250mL) Arborio rice
• 1/3 cup (80mL) chopped onion
• 1 cup (250mL) finely chopped fresh mushrooms
• 2 – 10 1/2 oz. (315mL) cans chicken broth
• 2 Tbsp. (30mL) lemon juice
• 4 tsp (20mL) Molly McButter® Natural Butter Flavor Sprinkles
• 1/2 cup (125mL) frozen green peas, thawed
• 1 Tbsp. (15mL) grated Parmesan cheese

Cook Time: 20 min
Instructions:
1. Spray a microwave safe 8” (20cm) square baking dish with non-stick cooking spray.
2. Combine rice, onion and mushrooms in prepared dish. Microwave on high for 5 minutes.
3. Stir in broth and lemon juice and microwave for 8 minutes.
4. Stir in Molly McButter® and peas and microwave for an additional 8 minutes.
5. Stir and cover with plastic wrap. Let stand for 5 minutes, stirring occasionally.
6. Sprinkle with Parmesan cheese, just before serving.
