Fresh Vegetable Pasta

Ingredients:
• 1/2 cup (125mL) vegetable stock
• 2 Tbsp. (30mL) Molly McButter® Natural Butter Flavor Sprinkles
• 1 Tbsp. (15mL) olive oil
• 1 cup (250mL) zucchini, diced
• 1 cup (250mL) cherry tomatoes, halved
• 1 clove garlic, minced
• 8 oz. (225.8g) small pasta shells, cooked
• 2 cups (450mL) raw spinach, chopped
• 1/4 cup (60mL) grated Parmesan cheese

Cook Time: 10 min
Instructions:
1. Heat vegetable stock and combine with Molly McButter®, set aside.
2. Heat olive oil in a large skillet over medium- high heat. Add zucchini and cook for 2-3 minutes, add tomatoes and garlic and cook for another 2 minutes.
3. Add pasta and spinach to skillet mixture and combine until spinach turns bright green. Add stock and mix well. Remove from heat and stir in Parmesan cheese before serving.
