Veggie Croquets

Ingredients:
• 2 medium yellow squash, grated
• 2 medium carrots, grated
• 1 large white onion, grated
• 1 cup (240mL) Italian flavored bread crumbs, plus more to coat
• 4 Tbsp. (60mL) corn meal
• 2 Tbsp. (30mL) Molly McButter® Natural Butter Flavored Sprinkles
• 1/2 tsp (2.5mL) freshly ground black pepper
• 2 egg whites, beaten
• Cooking Spray
• 2 Tbsp. (30mL) canola oil

Serves: 4

Cook Time: 12 min
Instructions:
1. In a large bowl, combine the grated yellow squash, carrots and onion.
2. Stir in the bread crumbs, corn meal, Molly McButter® and black pepper.
3. Pour in the beaten egg whites and mix until you have a thick paste.
4. Heat the oil in a non-stick skillet sprayed with cooking spray.
5. Form the vegetable mixture into patties, coat with bread crumbs and place in skillet.
6. Cook until each patty is nicely browned, about six minutes on each side.
