Lemon Shrimp Scampi

Ingredients:
• 1 cup long grain rice
• 1 Tbsp. olive oil
• 2 Tbsp. minced garlic
• 3/4 lb. large shrimp, cleaned
• 2/3 cup low sodium chicken broth
• 1 Tbsp. fresh lemon juice
• 1 Tbsp Mrs. Dash® Lemon Pepper Seasoning Blend
• 2 Tbsp. Molly McButter® Natural Butter Sprinkles
• chopped parsley and lemon slices for garnish

Serves: 4
Prep Time: 10 min
Cook Time: 25 min
Instructions:
1. Prepare rice according to package directions.
2. Heat oil in non-stick skillet. Saute garlic 1-2 minutes until soft - do not brown. Add in shrimp and cook 1 minute.
3. 3. Add in broth, lemon juice, Mrs. Dash® and Molly McButter®, increase heat and boil for 2 minutes. Remove from heat and stir into cooked rice. Garnish with parsley and lemon slices if desired.
